COOKING AT THE COLLEGE

Spiced Cider Sorbet

4 Quart                                                
    
4 cups apple cider or juice
2 cups sugar
1 teaspoon whole cloves
4 whole cinnamon sticks
4 cups unsweetened applesauce
2 cups cranberry juice
¼ cup lemon juice

6 Quart

6 cups apple cider or juice
3 cups sugar
1 ½ teaspoon whole cloves
6 whole cinnamon sticks
6 cups unsweetened applesauce
3 cups cranberry juice
1/3 cup lemon juice

Procedure:
    Combine the apple cider, sugar, clove and cinnamon sticks in a saucepan and bring to a boil over a medium heat, stirring occasionally. Boil for 5 minutes. Remove from the heat. Strain out the spices and discard them. Stir in the applesauce, cranberry juice and lemon juice. Cover and refrigerate for about 1 hour. Transfer to your ice cream freezer and freeze as directed.
