COOKING AT THE COLLEGE

Spinakopita

Ingredients

Puff Pastry Sheets (Available in Grocer’s Freezer made by Pepperidge Farm)
Baby Spinach (Clean, ready to eat available where ready to eat salad is sold in produce isle)
Feta Cheese
Onion

For approximately 24 appetizers:

One Box of Puff Pastry Sheets
1 Bag of cleaned, ready to eat baby spinach
8 ounces of feta cheese
½ or 4 ounces of sautéed yellow onion 

Mix all ingredients together except for puff pastry sheets.  Cut puff pastry sheets into 2x2 squares.  Put about a teaspoon of mixture into each square being careful not to get any mixture on the edges.  Fold pastry square over to form a triangle.  Crimp edges. Place on a baking sheet and bake in a 425 degree oven until puffy and lightly brown.  Serve immediately.
